Sinfully Good Carob Mint Dessert | Hallelujah Acres Canada

Preparation time: 20 minutes

Serving size: serves 6 people

Ingredients:?coconut oil ? coconut ? carob powder ? nuts ? dates ? bananas ? avocados ? mint ? agave ? flax seed ? apple butter

Method: This dessert is like a chocolate mint creamed pie with a chocolate macaroon crust that should satisfy any chocolate lover. This should be made up early in the day then kept cool in the fridge and is best served the same day.

Crust:

  • 1 cup soaked almonds (or any nut)
  • 2 tbsp carob powder
  • ? cup dates pitted
  • ? cup coconut butter/oil
  • ? cup apple butter

Cream the above ingredients in a large bowl until well blended then add:
? cup unsweetened coconut (save some of the coconut for the top & bowls)

Mix until it starts to clump.

Sprinkle your pie plate or dessert bowls with coconut then pat down the mixture to make a ? inch crust.

Line this crust with thinly sliced (2-3 firm yellow) bananas.

Filling:

In your food processor mix the following:

  • 3 ripe bananas
  • 2 ripe avocados
  • ? cup finely ground flax seed
  • ? cup agave syrup
  • 2 tsp fresh or dried mint leaves
  • ? cup carob powder

Process on high until smooth, this will thicken in the fridge later.

Pour over the banana lined crust and put in fridge until ready to serve.
